Being influenced by her family heritage in Swiss, French and English cuisine on her mother’s side, and Irish and Native American on her father’s, Shana has clear memories of standing along side her grandmothers in their kitchens, making breads, pastries & home made sauces ~ while learning traditional recipes and hearing old family stories. At the age of about thirteen, she began to help out in her father’s restaurant, learning her first lessons in customer service and food preparation. Growing up in a musical family, Shana toured the country and became comfortable on stage and in front of a camera. When Shana grew, married and began a family, she became passionate about creating her own memories for her children from the kitchen. Her growing interest in Italian cooking spurred a new confidence in the kitchen . There, she would take her small children, give them little stools and teach them all about making home-made pasta. Over the years, friends and family requested that when visiting each other for dinner it would always be at Shana’s! She began to help people plan parties and events and by request, found herself acting as personal chef without even trying! Shana was accepted to the LeCordon Bleu School of Culinary Arts in Las Vegas, Nevada, graduating with honors in Occupational Science. Her specialties include: French, American, European & Asian cuisine with 4.0 standings in Wine & Beverage, Cost Control, Business & Management and Hospitality. She is also “Serv-Safe” Certified. During her education Shana has also volunteered for many children’s benefits, such as “ Chefs for Kids”, a before-school program which provides meals for children in high-risk and low-income neighborhoods. Shana is also a member of the American Culinary Federation, In 2003, Shana and her mother began taping a cooking show, (“A Family Fare”) a program for local Northwest Arkansas TV station. They are compiling family recipes along with creative delights they have tested in their own kitchens, the two began writing their first cookbook, which they are editing at the present time. Shana brings her talent, energy and creativity to A Fare To Remember. She is a qualified and skilled chef with an ability to make people around her feel comfortable. Her aptitude for business and management will bring another element to the company that will only compliment the vision of afare.
Jayn Parenti is a marketing and advertising professional with more than twenty-five years of experience in communications. A respected business woman, her culinary expertise ranges from event planning, buffet design, innovative menu conception, recipe development, party/wedding consulting and hospitality. Beginning her professional career in the early seventies as a Media Director for a Southern California advertising agency, she held positions as Marketing Director, Advertising & Promotion Manager and Event Coordinator for a major shopping mall chain, various corporations and national non profit organizations. Being educated and experienced in theatre performing arts, Mrs. Parenti has traveled nation-wide as an artist, instructor and musical coach. With this (seemingly) unlikely background from which to enter the catering business, Jayn has combined her talents and experience to blend; the skill in projecting a favorable public image, ability to estimate budgets and anticipate market trends…. with her passion for food, and her flair for entertaining. Having held the many responsibilities of banquet planning, managing Volunteer Corps, (of up to 500 volunteers) and as an Administrative Director, Jayn has had vast experience in training and management. She has planned and coordinated hundreds of successful events from intimate parties of eight, large and small weddings and receptions, to convention banquets for fifteen-hundred guests. Joining with her Chef -daughter, (trained at Le Cordon Bleu in Las Vegas) Jayn began taping a cooking show in 2003 (A Family Fare) for a local Northwest Arkansas television station. The focus of the program is “sharing the joy” of bringing the entire family into the kitchen - creating more than a meal … creating an “experience”. The concept has prompted articles and speaking invitations due to her research that has shown that even children are more willing to try new dishes when they have had a part in creating them. With growing interest in the catering field and with many friends and business acquaintances requesting everything from helping with parties to craving her “to-die-for- Cheesecake”, to daily orders of five to ten dozen hot and cold submarine sandwiches from construction companies, Jayn found it a natural progression to enter the full-service catering business… thus “A Fare To Remember” was born. Offering her creative ideas for theme conception, décor and entertainment her fabulous menus and spectacular presentation, Jayn strives to balance the “theatrical” with good business. Whether it is a once-in-a-lifetime event such as a wedding or 50th anniversary, or a corporation’s annual banquet, Jayn believes the client must be given a real sense of confidence along with true excitement for the occasion.
